Picnic Day with Sammy Isomalt Class with Peggy Tucker

This super cute Ant is made with isomalt, yes, he’s all sugar. So, if you’ve ever wanted to learn how to play with isomalt and do blown sugar pieces, this would be the class to take.
​
In this  class you’ll be learning blown, pull and modeling techniques working with hot isomalt, heat lamps, sugar pumps, alcohol lamps to create your very own unique picnic Ant. There are no molds used in this class. The base will be pre-made but demo in class.

We’ll also be covering safety, coloring, flavoring and how to store isomalt finished pieces

all supplies, tools and equipment provided in class. 


This class is 4 hours long

Just Gotta Love Gnomes with Peggy Tucker

How cute are these Gnomes!!!!
 
Join Peggy in this class learning how fun and easy they Gnomes are to make. You’ll be making two ridiculously cute Gnomes to take home.
In class you will be working with Isomalt, heat lamp, torches (yep, I am going to give you a torch) and maybe two molds, but there are NO molds used to make the gnomes as they are all hand molded.

Garden Fairy with Peggy Tucker

Yes, she looks like glass, but this cute fairy is made from Isomalt.  In this class you’ll be working with Cakeplay’s premade Isomalt, heat lamp, molds and yes, a torch! We’ll be covering cooking, heating, safety, coloring, storing, pouring, and learning how to prepare the Isomalt for pulling, pouring, and shaping techniques. The Fairy body is all hand formed and her dress is made from pulled pedals and the wings made using a mold. She’ll be place on a pre-made base.
The Price includes all supplies.  Please bring to class a small box to take your Fairy home in

Pulled Sugar Roses with Peggy Tucker

In this class you’ll see just how easy it is to make beautiful pulled sugar roses.

You willl be learning how to prep the Isomalt, working with a heat lamp, pulling, and shaping the warm sugar into pedals to make the roses. Then it’s on to stems and leaves to finish off your beautiful roses. You’ll be making five or six roses in class. We’ll also be covering safety, coloring, flavoring, storing and so much more in class. No molds will be used in this class and all supplies are included.

Dragon Cookie with Peggy Tucker ( Includes Cake Play Kit)

In this 2 ½ -hour class you’ll be working with fondant,
Isomalt, dusting colors and air brushing to create your
Dragon cookies. I’ll show you all the techniques you’ll need then set you free to play and use your imagination and creativity to design three fabulous cookies.


Class cost includes the Dragon eye kit so you can continue
make cookies at home. Kit has one skin mat, one sheet of eyes, one eye mold that has many sizes and one bag of clear Isomalt.

Gumpaste Succulents  with Chrissie Boon​

​​Students will create a beautiful succulents will minimal use of tools.   Hand modelling and basic tools will be used along with suggestions on alternatives tools that you may already have in your own home kitchen. We will create the succulents as a topper and display them in a real clay pot. All supplies and tools will be supplied by the instructor in this 4 hour class. 

Students May want to bring a box to transport their project home.

A Cookie For All Seasons with Chrissie Boon

Do you have a stock pile of cookie cutters that you have only used once? Students will create four cookies using the same cutter. Exploring decorations for various seasons and discussing options to transition to other events to customize for their customer. Students will learn to
- Flood cookies in sections
- Make royal icing transfers
- Fondant modeling skills
- Lettering and shading
- Proper use of molds

Real  Borders with instructor Lucinda Larson

Drips are for those who don’t know how to pipe a REAL Border!!! Border’s seal our cakes to the board or plate, keep them from drying out and slipping. They cover rough edges and give your cake a finished completed look. Borders can also add to the overall theme or look of the cake. Let’s learn how to pipe REAL Borders to seal your creations securely to the cake board adding beauty and character to your cakes. We will aim to do at least 6 different borders.
 

Student should bring the following to class : Student needs an iced 8-inch round or square cake on a 12” round or square covered cake board, 2 to 3 cups of buttercream icing you like to work with, piping/decorating bags, Tips: star, plain round, rose, whatever you have, a spatula or 2, turntable, wash cloth, apron, pen for notes, a box to take home about 10” board.
​There are a maximum of 12 students in this 1.50 hour class

Piping Floral Sprays Directly on to the Cake with instructor Lucinda Larson

Being able to pipe floral sprays directly onto cakes or sugar arts is a great time saver, and it makes the cake totally edible and easy to cut and serve! And not everyone is willing to pay you for the time it takes to create gum paste flowers, and the skill to pipe buttercream flowers using nails, and skewers.
We will be piping buttercream flowers and foliage directly onto cake, using color and tips with our turntable to create an artist fall spray.

Student Supplies:
Student should bring a spatula or 2, turntable, decorating bags, tip numbers 352 (leaf), 104 & 127 (rose), 16 (star), and 3 (plain round), an artist palette knife (Wilton or artist), wash cloth, apron, pen for notes, a box to take home about 10” board.

Buttercream roses can be lovely, fast, somewhat realist, and colored beautifully. We will be learning how to make life like roses on a skewer. This makes them fast to create and use. You learn the tricks to color the bag to make the roses look realistic.
Finally, how to use our roses to create fall and winter floral sprays, right here and now.

Writing on cakes with instructor Lucinda Larson

So, you have created a really lovely cake or sugar piece and NOW YOU HAVE TO WRITE on it!!! Fear grips your heart – as you know it will either, 1. Ruin the cake, or 2. Look like a small child did it!
Learn the tips and tricks on how to write like a professional on your sugar pieces, even if you aren’t an expert! Lucinda can’t write on paper, but she knows how to write on cake!


Students should bring :Student needs a spatula or 2, decorating bags, tip numbers: 101 (rose), and 2 (plain round), a covered cake board or two to practice on, about 1 cup or two of buttercream you like to work with, wash cloth, apron, pen for notes, a box to take home about 10” board.

Christmas Cup Cakes with Lucinda Larson

Winter brings my favorite time of year! The holiday parties, family and friends gathering and eating delicious and pretty food. Making cupcakes for events and customers will grow your business (decorated cupcakes sell for $4.50 to 8.00 a cupcake!) and make your events shine!
 
We will be using buttercream, fondant, and gum paste to mold, hand mold, cutters, and piping to decorate our cupcakes. We will do simple and easy to more advanced decorations using glitter and such. 

Students Need to bring :A spatula or 2, wash cloth, apron, pen for notes, a box to take home about 12 cupcakes.

Basic Air Brush Techniques with Lucinda Larson

YEAH!!! You got an Airbrush, or you are thinking of buying an Airbrush. BUT, now what do you do with it??? How do you clean it, fix it, use It???
This is a very basic class on how to buy, use, and maintain an airbrush. Lots of different ways to use it, and how it can save you time and money in your cake and sugar art business. We will mostly be working on paper and learning how to handle and control your airbrush.

Student Needs to bring : an airbrush and compressor.  Small roll of paper towels, wash cloth, apron, pen for notes. We have a few airbrushes please let us know if you need to borrow one.

Gum Paste Pinecones with Lucinda Larson

What a fun and creative addition to add to your repertoire of gum paste fall, winter, and wedding floral and fauna sugar arts. The photo attached is from a royal blue wedding, showing how pinecones don’t have to be just brown or gray. Besides making a pinecone or two we will also be making some fillers for pinecone sprays as time permits.

Student should bring: Student needs a small spatula or pallet knife, wash cloth, apron, pen for notes, a box to take home about 10” board.

Fantasy Gum Paste Flowers with Lucinda Larson

We will learn how to create wired petals. We will vein, ruffle, and color the petals to create flowers that are fast, easy, and great space fillers for wedding and floral cakes. Because these flowers are fantasy, we can use color, sizes, and shapes to fit the need for the function/season of sugar art you are creating! We will be using stamen centers.
Lucinda will have some other tricks to make creative floral sprays. We will also be making some other fillers and leaves for sprays as time permits.

Student needs a small spatula or pallet knife, wash cloth, apron, pen for notes, a box to take home about 10” board. Small wire cutters if you have a pair.

Floral Mosaic Cookie Tiles with  Laura ​Saporiti

​Romantic, elegant, precious and delicate. These mosaic tile cookies have it all!
A brand new class, packed with useful tips to create perfectly shaped cookies, with my special Italian Pasta Frolla recipe for a dough that doesn't spread and it's also delicious!
We will address new pattern transfer techniques and I will also share with you my particular all
natural cocoa butter sugarpaste recipe without gelatin. And this is only the beginning!
The main core of the class will be focused on learning the tips and tricks to hand paint onto fondant or chocolate with a forgiving and easy to approach technique that uses cocoa butter as medium, but that can be easily applied to any other method. Boost your painting confidence! Beginners welcome.

​Everyone is welcome in this cookie class to learn a very effective but super easy fast technique to create realistic, texturized, super fine and delicate stitches onto a fabric weft that is the cookie itself. No need for extra sugar here, just a fine thin layer that will allow you to better taste its full flavor and aroma. Special Italian Pasta frolla cookie recipe will be given, along with a detailed step by-step instructional handout. And the best thing is that we won’t even need to use any piping tip!
Techniques:
- Innovative technique for making super-sharp miniature piping bags
- how to pipe a super fine 3d realistic embroidery effect
- how to achieve a texturized weft effect background

Vintage Tale Cookies with Laura Saporiti

​Who doesn’t love Beatrix Potter world and characters?!Let’s learn together how to create these lovely vintage style cookies. I will first guide you through recreating the fading old-looking writing on the background and teach you how to pressure pipe the border and outlining the letter for later flooding. We will then see how to paint Jemima duck on fondant through my water color veiling technique with powder colors in alcohol solution and how to complete with a little dusting to tone-down the whole picture. Please note that only one letter with character will be created during class, but models for the three of them will be provided along with the cookie dough and royal icing recipes.
Techniques:
- Vintage style writing
- Royal icing pressure piped border and run-out letter
- Covering of shaped cookies with fondant

Carousel Horse Cookie with Laura Saporiti

​In this class students will learn how to create a bas-relief figure on cookie through pressure piping by using only one consistency of royal icing, with a special hand-formed piping bag that doesn’t require any nozzle but allows superfine details. They will later see how to enhance the 3D effect by hand painting it with dust colors mixed with alcohol. Food safe tracing practice will also be addressed and a detailed step-by-step instructional brochure will be provided.

Dancing Ballerinas​ ​ with Laura Saporiti

What a dancing cuteness overload!
This is the perfect class to learn the basics of royal icing cookie decorating. After discussing how to achieve different consistencies depending on need, I will guide you through creating these delicate figurines using the flooding one for both body and shadow, later completing the design with fine painted borders. I will show you how to create lovely tiny miniature roses on cocktail sticks that you can also prepare way in advance and store for later use and we will discuss how to texturize the background and enhance it with dusting effect.
Please note that only two cookies will be completed during class, but models for the three of them will be provided along with cookie dough and royal icing recipe.

Cricut Cakes Made Easy DEMO with Barb Evans

Has your Cricut machine never been out of the box, or do you use it daily?  Either way this class will offer quick and easy uses of the Cricut that will make using your Cricut a regular go-to tool for cake decorating.   In this interactive / Demo class we will make a design suitable for placing on the top or side of the cake and a silk screen cookie stencil.  I will demonstrate how to make a cake topper and an acetate stencil.

All About Icing with Barb Evans

Discover the difference between several types of icing in this fun and super sweet class.  Students will learn to make  traditional Swiss Buttercream, Reverse Swiss Buttercream, Cream Cheese Icing and Stabilized whipping Cream.  We will discuss Italian Buttercream, French Buttercream and American Buttercream as well.    After making the icings I will share my method for a quick and effective way to ice a cake with buttercream.  It has taken me 40 years to collect this info – it can be yours in 1 hour! Sweet Cheeks Unicorn Baby with Chef Graciela Guzman

In this class you will learn the basics of figure modeling and Chef Graciela’s successful recipe for modeling fondant. While creating this cute baby figurine you will learn a quick way to create the internal structure of a model. Also taught will be how paint and shade to create a dramatic face. As and add you will learn how to create a candle that can be used at any birthday party.
Modeling materials will be supplied  by the instructor. The instructor will also have limited amount of tools to use, If you have modeling tools you might want to bring them. We will be using the following Dresden tools, mini rolling pin, small spatula, ball tools, silicone sculpting tool, small scissors, fine paint brush, and silicone matt. If you don’t have these please let us know and we can supply the tools. Please Bring Box 8x8  and 8” round cake board to Transport your figure

​A Modern Day Prairie Rose figuring  with chef Graciela Guzman

In this class you will learn more advanced modeling techniques and  Chef Graciela’s successful recipe for modeling fondant. While creating this figurine you will learn a how to successfully  create the internal structure of a model. You will also be taught how to model facial expressions or successfully use a face mold. Also taught  will be how paint and shade to create a dramatic face. These techniques can also be used for other modeling project you may come up with. Modeling materials will be supplied  by the instructor. In this class you will create a realistic life size standing jumbo wine bottle made 100% from cake. Learn: • how to carve the bottle from the bottom to the corked top • how to build the cake structure • how to fill and stack your cake • what icings you can use to cover the carved cake • how to sculpt the final layers whether using ganache or Italian meringue buttercream to form the perfect bottle shape. • how to cover the prepared cake with fondant for a smooth finish every time. • the final details to take this cake from “that’s cake!!!!” to “that’s cake????” • how to box the finished cake and be confident the client can transport the cake without failure **Note** This class will be using real cake. Tried and True Tiered Cake Structure Demo ​  with Leslie Foster

Remove the stress and worry of transporting tiered cakes. Learn how to prepare and stack your tiered cakes for failure proof transport. In class I will demo 4 stacking methods and compare the structural integrity, environmental impact, cost, and ease of use for each method. After the demo students will be able to examine up close the different methods and tinker around with them.

​ Students will take home a 14” Stable Mable Kit for stacking a 2-3 tiered cake.
