Water Lily Fountain Sugar Sculpture with Peggy Tucker
Warning….This is a two (2) part class!!!
Warning….You will be playing with water, electricity and sugar!!!
Part one’s class will be two hours and you’ll be working on the base of the cake that houses the water pump, getting all the fondant and painting work done and learning how to make edible moss.
Part two’s class will be four hours and you’ll be making all the sugar piece and assembling your Water Lily fountain and crossing your finger that it works… LOL
Because sugar pieces are very fragile and large pieces are hard to transport you may wish to fully assemble at home. Please bring to class a 12 in box and small bubble wrap.
Cake dummies will be precut and attached to the board for you.
You will want to register quickly for this Brand New Class there is a limit of 6 Students

In this Brand New 4-hours class playing with Isomalt to create a beautiful Topper or perhaps to use directly on the sides of your cake.
In classes you’ll be learning blown, pulled, and shaping techniques to design your sugar piece.
The topper consists of one blown spear, ribbons, pulled flowers and rolled and shaped filler pieces set on a poured base. You’ll be working with heat lamps, torches, alcohol lamp and of course Isomalt. But the beauty of this design is, NO molds will be used.
Please bring to class an 8in box or container to take your finished topper home in.

It's All About Ribbons with Peggy Tucker
In this class you will spend 4 hours on nothing but making RIBBONS!!!
At first, you’ll be working with one color of Isomalt until you have the ribbon pulling technique down to make loops before you move on to multiple colors to create beautiful bows. My hope is that by concentrating on only one technique you’ll come away with a newfound love for making beautiful Ribbons and Bows.

Whether it’s Easter, Thanksgiving or Christmas, Sugar arrangements are perfect as Centerpieces or cake topper. They all have a few things in common…. FILLERS!
Without Greenery flowers and centerpieces are just soooo boring and plain.
So please join me in this four-hour class working with Isomalt and learning how to make beautiful Greenery and Berry. Then will place them around a sugar candle that you’ll also be making in class to create a fabulous small centerpiece.

Wafer Paper Puffs and Rice Flowers with Peggy Tucker
Wafer Paper Puffs are super easy and fun to make and can be used as fillers or for a complete design look. In classes you’ll be making full and have puff spears and streamers to creating your design on a stacked two-tiered cake dummies.
We’re also going to play with Rice paper and make a few puff flowers.

Enhancing Your Eatable Arts with Prints with Chrissie Boon
From cookies to cakes, edible printing continues in popularity. Many times edible images are looked at as taking away from the art of creating. But they can be used in so many ways to enhance your edible works of art.
In this class we’ll create a cookie arrangement that combines piped characters, royal icing transfers, various consistencies of icing, flowers, and more. As well as works with edible prints. Move over Unicorn Cakes - Narwhals have taken over! Meet Nellie, our cute and loveable Narwal cake. She comes fully decked out in modeling chocolate ribbon roses, cloth looking leaves, isomalt water and splash, rice crispy square tale, and fondant fins. Theres a lot to learn in this course guys; it's a great intro in sculpting, and intro to isomalt. Sue also shows you how to stack a cake tall and thin, and neat tricks for smoothing ganache, and raising the cake board for easy handling.

Learn with me the tips and tricks to paint watercolor-like florals on fondant with my signature veiling technique. A watercolor-mimic effect, that I developed over the years, in order to adapt the traditional art painting technique to water-sensitive fondant, by painting one thin layer (like a veil) on top of another one to achieve a gradual shading of colors. Students will learn how to craft different flavor combinations using basic cakes, surprise ingredients, and gourmet touches. Kathleen will demonstrate how to complement each cake with various truffle fillings, mousses, fresh fruits, preserves, and other delightful cake fillings. Participants will also learn to make their own gourmet simple syrups infused with liquor and other flavors. Additionally, Kathleen will explain how to work with bakery-type non-dairy and stabilized whipped cream and provide an in-depth understanding of when and how to use American, Italian, and Swiss buttercream. Fresh Floral Designs with Kathleen Lange
Do you know the proper way to arrange fresh flowers for your cake designs? Do you know what types of flowers you can use and not use? Do you know what to do if the florist doesn’t show up to the event? This is the class for you! In this class, students will learn to make a basic floral arrangement, how to wire fresh flowers, make ribbon bow and tulle tuffs and learn to make a small boutonniere and corsage spray; instructor will also demonstrate a small bouquet. Everything students learn, maybe used in gum paste arrangements as well.

Wedding Cake Embellishment with Kathleen Lange
Kathleen developed a technique in the early 90s using piping gel and luster dust to replicate hard candy pearls and add gold embellishments to her cakes. She perfected this method while running her own wedding cake salon. Her technique impresses even the most distinguished cake design artists.
In this demonstration you'll learn to:
- Transfer Victorian scrolls and other designs by creating your own embossing patterns and presses.
- Embellish your wedding cakes to resemble bridal gown designs using piping gel, edible dusting powders, and techniques to apply highlights and dimension.
This technique can be used on cakes frosted with buttercream, whipped cream, or fondant. Once completed, you can refrigerate your cakes without the piping gel running. If you prefer not to use hard candy pearls, silver, or gold dragees, this method achieves the same elegant look without the risk of biting into hard candy.
